Flavor Profile

Turmeric, ginger, and pistachios are the flavor leaders in this Moroccan-inspired bar that is complemented by the slightly earthy pistachios.

Chewy dates, apricots and hazelnut butter give a lightly sweet taste and soft texture.

Ingredients

Almonds
Almonds with their fruity, marzipany, nutty flavor are the edible seeds (often categorized as a nut) of the Prunus dulcis tree native to southwestern Asia, which also grows easily in Mediterranean climates as well as California.

Cashews
The edible seed of the cashew fruit- cashews are highly nutritious and often classified as a nut.

Dried Currants
Zante currants are actually tiny dried grapes. They have a slightly sweet and tangy taste and are lightly coated with sunflower oil to help with the preservation of quality and flavor.

Hazelnuts
Sometimes described as indulgent, exotic, and special in flavor, Hazelnuts, also known as Filberts, are nutritious nuts from the Hazel tree (Corylus avellana). Hazelnuts can be consumed raw, however, the overall taste becomes more complex - sweeter and more mellow - when roasted.

Mixed Tocopherols
Mixed tocopherols are a combination of tocopherols that are known as vitamin E. Vitamin E is a fat-soluble vitamin that acts as an antioxidant to help protect the freshness of the bars.

Organic Apricots
With a subtly sweet yet tart flavor, some compare apricots as a cross between a peach and a plum. Dried apricots are dusted with organic rice flour to help them not be so sticky. Carotenoids are what give apricots their bright orange color. However, because these dried apricots are not treated with sulfur dioxide (which is used to protect the color), the fruits turn to brown during drying.

Organic Brown Rice
Organic Brown Rice is de-hulled to remove the outer shell while maintaining the bran layer and is considered to have a better nutrient content than white rice. As a whole grain, brown rice has a slightly nutty flavor and chewy texture.

Organic Brown Rice Syrup
With a consistency similar to honey, this syrup is derived from the cooking of brown rice. Rice syrup is used to support the integrity of the bar, helping to hold ingredients together while maintaining moisture content and supplying a slight sweet effect.

Organic Cardamom
A flavor cross between fennel, cumin, mint and citrus, Cardamom spice is made from Elettaria cardamomum seeds which are part of the ginger family (Zingiberaceae). Cardamon is considered one of the top three most valuable spices.

Organic Cinnamon
From tropical Indonesia, this aromatic spice is from the dried bark of the tropical trees from the genus Cinnamomum. A favorite in the spice world, cinnamon is sweet yet spicy.

Organic Dates
Sweet with a slightly caramel flavor, dates are the sweet fruit of the date palm. Naturally nutritious, dates are lower on the Glycemic Index (GI) as compared to cane sugar.

Organic Ginger
Ginger is a flowering plant whose root is widely used as a culinary spice and has a long history of use in herbal traditions.

Organic Honey
Nature’s sweet syrup and made from natural nectars, honey helps round out flavors while adding a complex sweet note. Depending on the nectar source, honeys can often have different flavor notes -- floral, fruity, nutty, caramelly, to name a few.

Organic Sunflower Seeds
Technically the fruits of the sunflower plant (Helianthus annuus), a single sunflower plant head can contain up to 2,000 sunflower seeds. Sunflower seeds may be consumed dried, roasted, or as a nut butter.

Organic Tapioca Syrup
Slightly sweet, tapioca syrup is an ingredient with a consistency similar to honey. Tapioca syrup is made from cassava root, also known as the yucca root, and is a structural component of the bars helping to keep their shape.

Organic Turmeric Powder
Helps support the body's antioxidant enzymes.

Pistachios
Pistachios are nutritious, nutty in flavor and texture, and are technically called a "drupe," which is a tree fruit containing a shell-covered seed. Some cultures revere pistachios as a symbol of health, happiness and good fortune.

Raisins
Dried grapes.

Rice Protein
A plant-based protein source without allergens or gluten which is extracted from rice.

Sea Salt
Sea salt comes from evaporated seawater and is less processed than table salt and may retain some of its trace minerals.
