Invigorating Panna Cotta Daily Reds With Coconut Hydrate

Ingredients

1 can Coconut Milk (unsweetened, 13.66 oz)

1 cup Milk (8 oz any milk)

4 tablespoons Milk (for blooming gelatin)

2 packets Gelatin Powder (1.8g packs)

2 servings Daily Reds

2 servings Coconut Hydrate

2 tablespoons Honey

10 oz Raspberries

6 oz Blueberries

2 tablespoons Maple Syrup

1 Lemon, zest

1/2 Lemon, juice

1 teaspoon Salt

2 teaspoons Mint (julienned)

Directions

Combine coconut milk, milk, Invigorating Daily Reds and Coconut Hydrate into a pot and place over medium heat.

In a small bowl combine the 4 Tablespoons of milk with the 2 packets of gelatin and mix.

As the milk mixture starts to simmer, stir in honey.

Once the milk mixture simmers, remove from heat and whisk in the gelatin.

In a separate mufUin pan, pour the Panna Cotta mixture into the cups evenly and refrigerate.

Return pot to stove over medium heat and add fresh berries.

Using a spoon, break up and smash berries releasing their juices.

Add maple syrup and zest of one lemon.

Add salt and simmer to desired consistency.

Once at desired consistency remove from heat and add lemon juice and mint.

After 4 to 6 hours remove Panna Cotta from the refrigerator and carefully extract Panna Cotta.

Plate Panna Cotta in the center of the desired plate.

Top Panna Cotta with berry compote, mint and serve.
