Lauren's Mega Nuts

The flavor that started it all! One of Picky Bars’s founders and the original recipe maker, Lauren, created this flavor in a little kitchen in Eugene, Oregon. It was then lovingly named after her interview on ESPN describing how she won her second 5k National Championship.

Ingredients

Almonds
Almonds with their fruity, marzipany, nutty flavor are the edible seeds (often categorized as a nut) of the Prunus dulcis tree native to southwestern Asia, which also grows easily in Mediterranean climates as well as California.
Cashews
The edible seed of the cashew fruit- cashews are highly nutritious and often classified as a nut.
Dried Cranberries
Fresh cranberries which are very tart and are a deep, rich red in color, are gently dried in a process similar to how grapes are dried to raisins. A member of the Honeysuckle family, cranberries are grown in bogs or marsh-like beds. Flavonoids, which include anthocyanins, are what give cranberries their deep red color. Dried cranberries are lightly sweetened with apple juice and lightly coated with oil to help preserve their texture and quality.
Mixed Tocopherols
Mixed tocopherols are a combination of tocopherols that are known as vitamin E. Vitamin E is a fat-soluble vitamin that acts as an antioxidant to help protect the freshness of the bars.
Organic Apricots
With a subtly sweet yet tart flavor, some compare apricots as a cross between a peach and a plum. Dried apricots are dusted with organic rice flour to help them not be so sticky. Carotenoids are what give apricots their bright orange color. However, because these dried apricots are not treated with sulfur dioxide (which is used to protect the color), the fruits turn to brown during drying.
Organic Brown Rice and Brown Rice Syrup
A natural sweetener derived from brown rice with naturally occurring fiber and minerals. Also used to support the integrity of the bar, helping to hold ingredients together while maintaining moisture and supplying a slight sweet effect.
Organic Date Paste
The fruit of the date palm plant that contains natural sugars and minerals. Dates are low on the Glycemic Index (GI) thanks to natural plant fiber, which helps slow down sugar absorption into the body. This results in a steady source of energy.
Organic Honey
Nature’s sweet syrup and made from natural nectars, honey helps round out flavors while adding a complex sweet note. Depending on the nectar source, honeys can often have different flavor notes -- floral, fruity, nutty, caramelly, to name a few.
Organic Pumpkin Seeds
Also known in North America as a “pepita,” pumpkin seeds are the edible seeds of the pumpkin squash fruit. Believed to have been cultivated some 8,000 plus years ago, pumpkin seeds are somewhat flat and oval, light green in color, and provide for a nutritious and crunchy snack or addition to many foods.
Organic Tapioca Syrup
Slightly sweet, tapioca syrup is an ingredient with a consistency similar to honey. Tapioca syrup is made from cassava root, also known as the yucca root, and is a structural component of the bars helping to keep their shape.
Organic Walnuts
Roundish or “ovoid” in shape (depending on variety), nutritious walnuts have a hard wrinkled outer shell which is divided into two sections within the shell. Each section contains the fruit or nut, which some say the shape resembles the human brain. Botanically a seed, walnuts are from any tree in the genus Juglans. Walnuts can be consumed raw, roasted, or as nut butter. They are often a desired ingredient in many foods such as mueslis, baked goods, trail mixes, and energy bars.
Peanuts
Botanically, peanuts are classified as legumes. However, for culinary, research, and nutritional purposes, peanuts are considered a nut. Peanuts are nutritious and can be consumed raw, roasted, or ground as nut butter.
Rice Protein
A plant-based protein source without allergens or gluten which is extracted from rice.
Sea Salt
Sea salt comes from evaporated seawater and is less processed than table salt and may retain some of its trace minerals.
Semisweet Chocolate Chips
Chocolate chips are small chunky morsels of perfectly balanced slightly bitter and slightly sweet chocolate. Chocolate chips have found their home as a favorite sweet bite in many foods such as trail mixes, bars, and baked items.
