Product Description


We believe in creating the most nourishing products possible, which is why we chose superfood ingredients like buckwheat flour and tigernut flour for our Pancake and Waffle Mix. Since this mix is specially formulated to require no egg or dairy, we've found a way to ensure the perfect fluffy result with a little extra magic from the inclusion of apple cider vinegar.  Ultimately, we’ve created a gluten-free mix that is as unique as it is delicious and we are so excited to share it with you!



Directions, Tips & Servings

Simply combine Pancake and Waffle mix with water, oil of choice, and apple cider vinegar according to directions. This versatile mix creates the perfect fluffy pancake or waffle in just minutes!

For Pancakes: add your preferred oil to a pan and cook 3 minutes on each side on medium high heat. If using a griddle, 350-400 degrees fahrenheit is recommended.

For Waffles: on a heavily oiled waffle iron, cook on medium to high setting for 4 minutes or until done.

1 cup of mix makes 6 x 3" pancakes and 1 x 6" waffle.

Flavor Profile

This homemade mix makes incredibly fluffy, rich, and light pancakes or waffles. The tigernut flour, buckwheat flour, and coconut sugar create the perfect flavor for your favorite breakfast. 


Baking Soda
Sodium bicarbonate. Baking soda is the ingredient that makes baked goods rise.

Coconut Milk Powder
Coconut Milk is an ideal substitute to traditional milk, and we are just beginning to understand all the benefits it offers from a nutritional perspective. Coconut Milk Powder is simply evaporated coconut milk and is a great shelf-stable ingredient in many of Laird Superfood's products!

Organic Buckwheat Flour
Flour made from ground buckwheat.

Organic Chia Protein
Chia seeds are nourishing and when wet, form a gel that helps bind baked goods together. They come from the Salvia hispanica plant, a member of the mint plant family.

Organic Cinnamon
From tropical Indonesia, this aromatic spice is from the dried bark of the tropical trees from the genus Cinnamomum. A favorite in the spice world, cinnamon is sweet yet spicy.

Organic Coconut Sugar
Coconut sugar is derived from the nectar of coconut tree blossoms. Our organic coconut sugar has absolutely no artificial ingredients or preservatives – just 100% pure organic coconut sugar.

Organic Tigernut Flour
A tigernut is a small root vegetable that grows in Northern Africa and the Mediterranean. Tigernut flour is naturally gluten free.

Sea Salt
Sea salt comes from evaporated seawater and is less processed than table salt and may retain some of its trace minerals.

Tapioca Flour
Tapioca flour is made from the crushed pulp of the cassava root, a woody shrub native to South America and the Caribbean.
