
Performance Coffee Date Pecan Bread
Ingredients
1 cup Dates, pitted (soaked, chopped)
1 teaspoon Baking Soda
1 cup Performance Coffee (Brewed)
2 tablespoons Unsalted Butter (softened)
1 cup Vanilla Coconut Palm Sugar
1 teaspoon Vanilla Extract
1 Egg
1 1/2 cup All Purpose Flour
1 teaspoon Salt
1 cup Pecans Chopped

Brew a pot of Lairds Organic Performance Coffee with Functional Mushrooms.

Pit dates. Place in a large bowl and cover with boiling water for up to an hour.

Preheat the oven to 400 degrees. Grease 8x4-inch pan and line with parchment paper.

Drain dates and place them in a small bowl with baking soda and 1 cup of the hot, fresh brewed Performance Coffee and let sit for a few minutes.

In a food processor add the date, coffee, baking soda mixture and blend until smooth. Set aside.

In a mixing bowl, mix together butter, sugar, and egg until well mixed. Scrape the sides of the bowl and add vanilla. Add Rlour, salt and date coffee mixture. *Note, you can add 1/2 of the pecans here. Transfer batter to the prepared pan.

Add the Pecans onto the top of the batter. Be sure to press them into the mixture slightly.

Place in the center of the 400 degree oven and bake for 1 hour. Remove from oven and let the bread stand for 5 minutes before removing from the pan. Remove the parchment paper and Rinish cooling on a wire rack.

After an hour or so and the bread has cooled through entirely. Slice and enjoy!!!
