
Performance Mushrooms Inside-Out Egg Roll
Ingredients
2 tablespoon Avocado Oil
2 cup Carrots, diced
1 cup Shallot (thinly sliced)
1/4 cup Garlic (thinly sliced)
2 tablespoon Ginger, minced
1/2 pound Shiitake Mushrooms (Mushroom Caps thinly sliced, about 2 cups)
2 tablespoon Performance Mushrooms
3 pound Ground Pork
1 medium Napa Cabbage (head remove leaves and thinly slice)
1 teaspoon Kosher Salt
1 teaspoon White Peppercorns
1 teaspoon Ground Black Pepper
1/2 cup Green Onion
4 tablespoon Liquid Coconut Aminos
1 tablespoon Cider Vinegar (Apple)
2 tablespoon Toasted Sesame Oil
Directions

Place a large saute pan over medium high heat and add avocado oil.

Add carrots and shallots to the pan, stirring occasionally for 3 to 4 minutes.

Add shitake mushrooms and continue stirring and cooking until mushrooms are soft and lightly caramelized.

Add ginger and garlic stirring in with all the ingredients until fragrant.

Add Pork to the pan. At this time add salt and peppers.
