Swedish Protein Coffee Balls

Ingredients

3 cups rolled oats

1 cup coconut sugar

6 tbsp Protein Coffee (Vanilla or Sweet & Creamy)

1 cup butter (softened)

4 tbsp water (coffee is good here too)

2 tsp vanilla extract

Unsweetened shredded coconut for rolling

Directions

Add the rolled oats, coconut sugar, and protein coffee powder to a bowl and mix well.

Add the softened butter, water, and vanilla to the bowl. Use a spatula or gloved hands until mix is fully incorporated.

Chill the covered mixture in the fridge Once it's cold, roll into small balls with your hands and then roll each ball in shredded coconut. 4) Store the balls in a sealed container in the fridge for up to a week or freeze for up to a month.
