Double Chocolate Chip Cookies

The Laird Superfood family loves these vegan and gluten free cookies for an easy-to-make treat any time of day. Indulgent, gluten free, and vegan, our cookies are packed with veggies like kale, beet and carrot powders.

Preheat oven to 350 degrees Fahrenheit. Combine one bag of cookie mix with 2 tbsp of water and 1/4 cup of oil (we love avocado oil). Grease a baking sheet and use a tablespoon to scoop dough into balls. Bake for 8-11 minutes. Let cool and enjoy.

Almond Flour
Simply, ground almonds. Almond flour is often used in gluten-free baking!
Arrowroot Flour
Arrowroot is commonly used in gluten-free and grain-free baking. Arrowroot is a root vegetable and its flour is often used in baking for its thickening abilities.
Baking Soda
Sodium bicarbonate is commonly known as baking soda. It is the combination of sodium cation and bicarbonate anion and is used to balance acidity.
Cocoa Butter
Cocoa butter is a stable, edible and plant-based fat pressed from the cacao bean.
Organic Beet Powder
Some call this nutritious superfood “beetroot” powder. Dark and pinkish-red in color, this powder is made from dried and ground organic beets. Beets (Beta vulgaris) have a slightly sweet and earthy flavor and contain pigments called “betalains,” which are responsible for its vibrant color. Beet powder can easily be mixed into many foods, baking recipes, smoothies, or in this case, granolas. The use of beetroot powder dates back to Roman times.
