Our high altitude beans are grown in the Peruvian mountains, handpicked at peak ripeness and perfectly roasted to a medium roast profile with no oil on the surface. They retain moderate acidity – which contributes to brightness and complexity. We add a mix of organic functional mushroom extracts and Aquamin™ to the surface for that added function. Due to the beans having minimal oil these functional ingredients stick to the beans and appear with a white residue. It is not mold, we test 2x for that, it is the yummy functional stuff…so make sure it makes it into your cup.
