Serves 3-4

Time: 30 minutes

Ingredients:

  • 1 tbsp olive oil
  • 1 medium-sized onion, diced
  • 1.5 lbs brown and white button mushrooms, thinly sliced
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme
  • 1 tsp dried basil
  • 1 tbsp liquid aminos or tamari
  • 3 1/2 cups low-sodium vegetable stock
  • 1/2 cup Original Superfood Creamer with Functional Mushrooms
  • 2 tbsp arrowroot, tapioca or cornstarch mixed with 2 tbsp water
  • Sea salt, to taste
  • Black pepper, to taste

Instructions:

  1. In a large pot, heat the olive oil over medium-high heat and add the onion. Sauté for 2-3 minutes, until soft and fragrant. Add mushrooms and garlic and sauté for another 5-6 minutes, until the mushrooms have shrunk and released moisture. 
  2. Add the thyme, dried basil, liquid aminos/tamari, vegetable stock and creamer. Stir well, then bring to a simmer and cook for 15-20 minutes on low heat.
  3. Mix the arrowroot, tapioca or cornstarch with water and add to the pot. Stir well and simmer for another 2-3 minutes. Season with sea salt and black pepper.
  4. Serve the soup as is, with a sprinkle of thyme and black pepper or blend with an immersion blender until smooth if you prefer a puréed soup.

      Love mushrooms, have made my own cream of mushroom soup for the famous holiday green bean casserole! It was really good!

      I am looking forward to making this recipe… but have one suggestion…

      My favorite herb with mushrooms is TARRAGON!
      I have made a mushroom gravy seasoned with tarragon to serve over burgers!

      I am trying to get mushrooms into my diet everyday so this recipe is perfect because 1st, it’s mushrooms and 2nd, it’s delicious! It’s also easy to make full of flavor. It’s what I have been looking for for years. Thank you Laird Superfood!
