A much healthier whole food alternative, these Laird Superfood filled sweets are free of harmful sugars and highly refined ingredients found in most processed pastries, muffins, and desserts. These recipes are also Paleo and vegetarian-friendly, dairy-free, gluten-free, and soy free.
Crushin’ It Cacao Cashew Cookies
Servings: Yields about 30 mini cookies
Ingredients
- 2 cups unsalted raw cashews
- 6 large Medjool dates, pitted
- 1/4 cup coconut oil (warmed so that it’s in liquid form)
- 1/2 cup Laird Superfood Cacao Creamer
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon fine sea salt
Directions
- Combine all ingredients in a food processor and process for 1 minute, or until it looks like thick cookie dough.
- Transfer to a large bowl and use your hands to make into 30 mini cookies.
- Place in the freezer for at least 30 minutes before enjoying. These cookies are best straight from the freezer.
Victory Vanilla Shortbread Bites
Servings: Yields about 24 mini bites
Ingredients
- 2 cups (8 oz) raw unsalted walnuts
- 1 cup shredded coconut
- 1/2 cup Laird Superfood Original Creamer
- 1/4 cup raw honey
- 2 teaspoons vanilla extract
- 1/4 teaspoon fine sea salt
Directions
- Combine all ingredients in a food processor and process for 1 minute, or until it looks like thick cookie dough.
- Transfer to an 8×6 baking dish. Press the dough evenly into the dish to form one giant bar.
- Place in the freezer for at least 30 minutes before slicing into 24 mini square-size bites. These bites are best enjoyed straight from the freezer.
