Superfoods Creamy Mac & Cheese

Total Yield: 12 serving
- 2 pound Macaroni (elbow)
- 2 cup Carrots, diced
- 6 cup Vegetable Stock
- 3 cup Liquid Creamer Unsweetened
- 1.5 cup Nutritional Yeast (BBQ)
- 1 cup Cashews (raw, unsalted, unfrosted)
- 2 tablespoon White Miso Paste
- 4 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- 1/2 teaspoon Turmeric Powder
- 1 tablespoon Salt
- 0.5 teaspoon Ground Black Pepper
Directions:
- Fill a pot with 6 quarts of with 1/2 tablespoon salt and place on stove over high heat bringing to a boil.
- Add 2 pounds macaroni to boiling water.
- Set timer for 8 minutes.
- Stir pasta regularly to ensure that none are cooking to the bottom of the pan.
- Once timer goes off, check pasta for doneness.
- Remove from heat and strain keeping a cup of the cooking water.
- In a pot add 6 cups of vegetable stock and bring to a boil.
- Once boiling add diced carrots and lentils.
- Set timer for 10 minutes.
- Cook until the lentils are cooked through.
- Add lentils, carrot and liquid to a large blender.
- Add Superfoods liquid creamer, cashews, yeast, miso, onion, turmeric, garlic, salt and pepper and blend until smooth.
- Test for taste and consistency. If you like it thinner, pour some of the pasta cooking water in.
- Pour into noodles and stir and serve.
- Cover and refrigerate.
